Jam / Preserving Sugar

Jam or Preserving Sugar is a commercial product that you will usually not need to buy. It is simply sugar with powdered pectin added to it. 
 
If you are using fruits high in pectin, such as citrus fruits, cooking apples or damsons you won’t need added pectin, and even with low pectin fruits, such as strawberries, a splash of lemon juice or the addition of a few apple cores will often ensure a good set. 
 
If you keep a small container of liquid or powdered pectin available, just in case, you should always be OK. 
 
Preserving sugar usually costs more than ordinary sugar and a packet of pectin combined but, if you want convenience rather than economy, it is a way of guaranteeing that low pectin fruits will set.
