Elderberry Jam

Ingredients
- 450g (1lb) elderberries
- 400g (14oz) sugar
- 150ml (5 fl oz) water
- Juice of 2 lemons
Instructions
- Place all ingredients into a large saucepan, mixing thoroughly.
- Cook over a medium heat for 30 to 40 minutes or until mixture reaches setting point.
- Pour into hot sterilized jars.
- Seal and store in a cool dry place.
My pan will take 4lbs of elderberry instead of just one lb. Does it effect the finished effect if more is made at

Hi Peter,
Just multiply the sugar, water etc to match the weight of the elderberries and all will be fine. The only issues with making larger batches are:
1. Make sure you have enough jars ready
2. There can be a little more splattering if the pan is full
3. If you decide you don’t like Elderberry Jam, its a LOT of jam to give away at Christmas 🙂
