Loganberry Jam

  • 2kg (4lb) loganberries
  • 2kg (4 lb) sugar granulated white
  • 15ml (1 tablespoon) lemon juice:
  1. Clean the fruit.
  2. Place in a preserving pan and cook gently until the fruit is soft and mushy.
  3. Gently add the sugar. Still all the time and continue until all the sugar is dissolved.
  4. Bring to the boil and boil hard until setting point is reached.
  5. Pour into sterile warm jars and seal immediately.
