Raspberry Jam

  • 910g (2lb) raspberries
  • 910g (2lb) of sugar
  • (or other equal measures of fruit and sugar)
  1. Pick over the berries and remove any bad ones.
  2. Place the berries and an equal weight of sugar into a preserving pan.
  3. Bring to the boil, stirring to ensure that all the sugar dissolves.
  4. Boil hard for 3 to 4 minutes, skimming off scum if necessary.
  5. Pour into prepared jars and seal.
